Foodie Call: Black Bean and Chorizo Dip recipe
Black Bean and Chorizo Dip

2 15 oz cans black beans
½ lb cooked and diced chorizo
¼ cup sour cream
3 tbsp olive oil
1 lime, juiced
salt and pepper to taste


Drain and rinse black beans. Purée ½ of the beans in a food processor; reserve the remainder.

Add lime juice and sour cream to food processor and blend until creamy; add water (or more sour cream) if necessary to achieve desired creamy consistency.
Pour contents of food processor into a bowl. Mix in remainder of black beans and chorizo.
Season to taste with salt and pepper and perhaps more lime juice. If you'd like, heat in microwave until hot.
Drizzle with cilantro cream and serve with tortilla chips.

Cilantro Cream

1 bunch cilantro, de-stemmed
1 serrano pepper, de-seeded and roughly chopped
2 garlic cloves, roughly chopped
1 tbsp lime juice
¼ cup sour cream
¼ cup diced red onion
1 tsp sugar
salt and pepper to taste

Combine all ingredients in food processor and blend until creamy. Add water if necessary to reach desired consistency.
